Ground cinnamon
Cinnamon is one of the oldest and most valuable spices in the world. It is extracted from the inner bark of evergreen trees of the genus Cinnamomum, which grow in tropical and subtropical regions of Asia. Two main varieties of cinnamon can be found on the market – Ceylon (true cinnamon) and cassia. Ceylon cinnamon is more delicate and valued for its softer texture and weaker flavor, while cassia has a stronger and pungent flavor, as well as a thicker bark.
True cinnamon is considered to be of higher quality and is used mostly in European and Middle Eastern cuisine, while cassia is more widely used in Asian and American cuisines. Cinnamon is distinguished by its sweet, warm aroma and spicy flavor, which gives a unique depth to dishes. It is often used in baked goods, sweets, desserts such as cinnamon rolls, as well as in various hot drinks such as hot chocolate and mulled wine. In India and other Asian countries, it is an important component of spice mixtures for meat and vegetable dishes.
Cinnamon is also used in healthy beverages, such as cinnamon tea, which is drunk to improve digestion and regulate blood sugar. Ground cinnamon is obtained by grinding the dried bark and is convenient to use in various recipes, as it is easily integrated into mixtures and marinades.
Cinnamon contains essential oils and antioxidants that give it healing properties. It is known for its antiseptic and anti-inflammatory properties and is often used in traditional medicine.
