White pepper comes from the same plant as black pepper, but it goes through a different processing process. Unlike black pepper, white pepper has the outer black skin of the fruit removed, leaving only the inner seed. This gives it a lighter color and a milder flavor.
It has a milder and less pungent flavor than black pepper, making it preferred in dishes that require a more subtle flavor, or when the visibility of the black grains in the finished dish is not desired. It is widely used in white sauces, soups, potato dishes, and in some Asian dishes.
White pepper possesses the same basic aromatic and spicy components as black pepper, but with a milder effect. It has an excellent ability to accentuate the flavor of other ingredients without dominating them.
This makes it ideal for dishes that require balanced flavor and elegance, such as in European and Asian cuisine.
