Mahleb is obtained from the kernels of a special type of wild cherry (Prunus mahaleb), which grows in Southern Europe, the Middle East and parts of Central Asia. The inside of the pits contains small almond-like seeds, which, after drying and grinding, become an aromatic spice with a subtle, sweet and slightly bitter taste, reminiscent of a combination of almonds, cherries and vanilla.
Mahleb is widely used in traditional Middle Eastern, Mediterranean and Balkan cuisine, especially for flavoring pastries, breads and pastries. It is a key ingredient in Greek Easter bread (τσουρέκι), Arabic pastries and some Turkish desserts. In addition to confectionery, mahleb can also be used in savory dishes, where it adds depth and richness to the flavor.
