Red pepper
Red pepper is a spice that is a powder or small flakes obtained by grinding or crushing dried red peppers or chili peppers. Along with the most traditional flavorings – salt and sugar, this is the most common spice in culinary dishes around the world. The names of the spice vary in different languages, but they all refer to the same type of spice obtained from the fruits of the pepper plant.
It gives dishes their specific sweet aroma, which is fully released during heat treatment. It should be short and moderate, because at high temperatures the sugars in it burn and its taste becomes bitter.
Red pepper generally comes in two types based on its taste – hot and sweet.
- Hot red pepper (chili, cayenne) is made from ripe hot peppers and is used to spice up dishes, sauces, and spice blends.
- Sweet paprika is made from sweet red peppers and gives dishes a slightly sweet flavor. Red pepper colors dishes a pleasant orange to brick color. It is sometimes used to sprinkle various products, but then its aroma is not fully released and the effect achieved is more aesthetic than tasteful.
